You will need :
450g Tomatoes, roughly chopped
2 garlic cloves, chopped
2 red chillies, chopped
1cm ginger, grated
250g granulated sugar
60g Balsamic vinegar
salt & pepper
my addition:
50g fresh Cranberries
- Blitz all the ingredients (except cranberries) together in a food processor - I used a mini blender & did it in batches.
- Pour into a large saucepan, add Cranberries.
- Boil for 25-30 minutes - I boiled mine for around 1 hour, stirring occasionally, until it thickens.
- Pour into sterilised jars.
