Thai Spiced Pork & Peppers - serves 4/5
1 tbsp Olive Oil
2 tbsp Thai paste
600g Pork Loin steaks, cut into strips
3 Peppers, de-seeded & sliced
3 tomatoes, roughly chopped
1 tbsp Dark Soy Sauce
1 tbsp Cornflour, mixed to a paste with a little cold milk
- Heat the olive oil and thai paste in a pan for 30 seconds
- Add the pork and stir to coat with paste
- Cook for approx 10 minutes, stirring regularly
- Add the peppers, tomatoes and soy sauce
- Place the lid on & cook for approx 5 minutes
- Thicken the sauce with the cornflour paste (use as much as needed to thicken)
- Cook for a further 2-3 minutes
- Serve with Basmati rice
